Have you ever baked with almond flour?
I discovered almond flour last year online. I was looking for bread and muffin recipes that did not include regular flour and I came across almond flour.
I have been baking with it for the past 6 months and just love it.
It is very high in protein and very low in carbs.
This recipe is one of my favorites. It is simple to put together and tastes delicious.
Low Carb Dark Chocolate Chip Banana Muffin Recipe
(Makes 12 muffins) Preheat oven to 350 degrees F.
3 ½ bananas
1 tablespoon vanilla extract
¼ cup butter – softened
½ teaspoon sea salt
1 teaspoon baking soda
2 cups blanched fine almond flour
1/3 cup dark chocolate chips
I use a food processor for this recipe.
Put bananas, eggs, vanilla and butter in the food processor.
Pulse until smooth.
Add salt and baking soda.
Pulse a few more times.
Add chocolate chips.
Pulse quickly. Make sure you hold on to the food processor. I found that as soon as I added the chocolate and hit the pulse button my food processor wanted to leap off of the counter top.
The last ingredient is the almond flour.
Add all of the almond flour at once.
Then do 3 quick pulses. Do not over mix.
Fill a 12 cup muffin tray and bake at 350 degrees F. for 23 to 25 minutes.
Sometimes I add golden raisins and coconut instead of the dark chocolate chips. Either way they are yum.
